FOOD: Dessert making

I still life at home with my parents so the times I've cooked a meal myself can be counted on one hand. Every Monday I think: this weekend I'm finally going to try and cook something but by the start of the weekend my schedule has completely packed up and my good intentions are out of the window.

At Christmas Eve my grandparents always come over and join us for dinner. So I decided to help my mum make the desserts. We made two desserts by ourselves: a duo of white and a dark chocolate mousse with raspberries and Tiramisu with strawberries. Below I will show you the recipe and the ingredients we used. I have to warn you that we adapted the recipes a bit to our own tastes.

Duo of white and dark chocolate mousse with raspberries

Ingredients: 200 g egg white (5 or 6 eggs), 70 g granulated sugar, 300 ml cream, 180 g white chocolate, 200 g dark chocolate, 1 box of raspberries,

  1. Melt the white and dark chocolate seperately au bain-marie.
  2. Whip the egg white with the granulated sugar. Mix half of it with the white chocolate and the other half with the dark chocolate.
  3. Whip the cream and mix it with the chocolate as well. Put the mousses in glasses and put them in the fridge.
  4. Serve the mousse with some raspberries on top .

Tiramisu with strawberries

Inredients: 400 g strawberries, 250 g mascarpone, 8 "lange vingers", 2 eggs, 60 g sugar, 2 bags of vanilla suger

  1. Wash the strawberries, remove the crowns and cut them in half.
  2. Split the eggs. Whip the egg yolks together with the mascarpone and the sugar.
  3. Whip the egg white togehter with the vanilla sugar.
  4. Break the "lange vingers" and put them on the bottom of your glass together with some strawberries and mascarpone. Repeat each layer until your glass is filled.
  5. Put the glass in the fridge for a little while.

DIY: How to make Guacamole?

If you're wondering why I have been quiet lately it's because I had a super busy weekend. I still live at home and never cook dinner. So inviting a couple of friends at home and serve a three course dinner was quite challenging. I started preparing Thursday evening and continued Friday.

Although I barely have any cooking experience I must say that the dinner was quite succesful. OK, I admit that some courses didn't go as planned but still I'm very pleased. To start off the evening I served some nacho's with homemade Guacamole. This is one of my favourite dip sauce. Here's how I made it:

Ingredients:

- 2 avocados
- 2 onions
- 2 Spanish peppers
- 6 spoons of cut corianders leaves
- 4 spoons of olive oil
- 6 spoons of lemon juice
- 2 tomatos

Peel and cut the avocados and onions. Erase the seeds from the Spanish peppers. Mix all these ingredients with lemon juice and olive oil in the mixer.

Add salt, pepper and the cut coriander leaves to the mix and leave it in the fridge for a couple of hours.

Tip: I usually serve the guacamole with nachos.
